So due to my last post, I have had some people who have wanted my recipe to the wheat bread that I made. So, here it is:
(I used white wheat...but I am sure it would work with the red also)
1 T Sugar
2 T Yeast
1/2 C warm water
3 C Hot water
1 T salt
1/2 C of oil
1/3 C brown sugar
10 C whole wheat flour***
2 T dough enhancer
Combine sugar, yeast, and 1/2 cup warm water in small bowl. In a seperate bowl add all the remaining ingrediants. ***Only add 5 cups of flour at first. Combine the yeast mixture with the flour mixture. Then start adding the rest of the 10 cups of flour 1 cup at a time until it is just barely sticky to the touch. (I ended up only using about 9 1/4 cups of flour but will very from day to day depending on humidity, etc.)
Cover a large area on the counter with oil and knead your dough mixture in it for about 10 minutes. This should take aways most of the stickiness. seperate dough into 3 equal balls and place in seperate bowls. Cover bowls with damp towel and let rise for about an hour. Dough should double in size.
Punch douhg down with your fists and take out of bowel one at a time. push bread out into a rectangle about a foot long and 6 inch wide. flatten out to work out bubbles. fold into thirds and work out bubbles again.Roll your dough into a loaf shape and place in a greased loaf pan. Flip so that all sides have the grease on it. Let rise again until dough doubles in size. It should be about a couple in ches above the loaf pan edges.Do this to all through loaves.
Bake at 350 for 25 minutes. Turn oven off and cook an additional 4 minutes. (It should have a nice golden brown crust and will sound hollow when tapped on). Smear top of bread with a little butter. Let Bread cool in pans on a cooling rack for about 5 minutes. Remove from pans and ENJOY!!!
***Do not add too much flour, this is what can make the bread hard and heavy!!!
